Home & Kitchen with Caraway

At Caraway , we believe comfort food should feel as good as it tastes. Meatloaf is one of those timeless dishes that instantly brings a sense of home, but let’s be honest, it doesn’t always have the best reputation. Our version keeps all the classic flavor while taking a more health-conscious approach, so you can enjoy a hearty meal without the heavy feeling afterward.
This recipe is straightforward, satisfying, and perfect for busy home cooks who want something wholesome on the table without hours of fuss. And the best part? It fits perfectly in our Ceramic-Coated 1 lb Loaf Pan, which makes for effortless baking and cleanup.
1 lb lean ground turkey or grass-fed beef
1/2 cup finely chopped onion
1/2 cup rolled oats or whole wheat breadcrumbs
1/2 cup grated zucchini or carrot (for moisture + nutrients)
1 egg
2 cloves garlic, minced
2 tbsp low-sodium ketchup
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1/2 tsp smoked paprika
Salt & pepper to taste
For the glaze:
2 tbsp low-sodium ketchup
1 tsp maple syrup
Preheat & prep. Heat your oven to 375°F. Lightly coat your Caraway Loaf Pan with a small drizzle of olive oil. Thanks to the naturally slick ceramic, that’s all you’ll need.
Mix it up. In a large bowl, combine ground meat, onion, oats, grated veggies, egg, garlic, ketchup, mustard, Worcestershire sauce , and seasonings. Use clean hands or a spoon to mix until just combined (overmixing makes it dense).
Shape & bake. Transfer mixture into the loaf pan, pressing gently into an even layer. Spread the ketchup-maple glaze over the top.
Bake. Cook for 40 to 45 minutes, or until the internal temperature reaches 165°F. Let it rest for 10 minutes before slicing, which helps the juices settle.
Serve. Pair with roasted veggies or a simple side salad for a balanced, weeknight-friendly dinner.
This recipe is lighter than traditional versions thanks to lean meat, extra veggies, and less sugar in the glaze. And since our Caraway Loaf Pan is non-toxic and non-stick, you can skip the foil and the scrubbing that usually follows.
It’s a modern spin on comfort food. It’s clean, simple, and undeniably delicious.
Meatloaf proves that classics never really go out of style. They just need a little freshening up. By lightening the glaze, sneaking in some veggies, and being mindful of technique, you get all the comfort of the original without the heaviness. Round it out with simple sides like roasted sweet potatoes, garlicky green beans, or a bright grain salad, and you’ve got a balanced plate that feels both nostalgic and modern.
At Caraway , that’s exactly how we think about the kitchen: small, thoughtful changes that make everyday cooking cleaner, healthier, and easier. Whether it’s bakeware, cookware, or food storage that keeps your cabinets organized, we’re here to help you cook the food you love and feel good about how you’re making it.
